 So, I’m all about spicy + low calorie… especially if it involves chicken! Since moving into our home, John and I have been cooking so much more and trying new, fun (healthy) recipes. I follow Skinnytaste on Facebook so I am constantly screenshotting her recipes so that when I get groceries I can get the exact things needed! When I saw her recipe for a skinny buffalo chicken dip – I was immediately excited! My recipe is a bit different from hers – I wanted to change it up to make it perfect for John & me – and I wanted to bring the calorie count down a little. For example, instead of sour cream, I used Greek Yogurt & instead of using bleu cheese I used just a bit of Mexican cheese.
 
Anyway, I snapped about this dip a few weekends ago and I so many people ask for the recipe so I decided to do a full out post on it! I ended up making this dip again for when the residents came over and of the girls & guys were like “woah what is this?!” (clearly not noticing that it’s low calorie!). This is pretty much just an easy, simple (crockpot!) recipe that tastes like it required some time! 🙂
 
Anyway, this is my rendition of buffalo chicken dip – even w/ me making it a bit healthier, it is still crazy good & flavorful!! 
 
What you’ll need: (if you just want a small serving for 4-5 people)
 
1. One Rotisserie Chicken 
2. 1/2 Cup of Franks Hot Sauce or Cholula Hot Sauce (I’ve used both- this step is very important!)
3. 1 Cup Greek Yogurt (I’ve used non-fat & regular – both taste good so I go for the non-fat typically.)
4. 1 Teaspoon White Wine Vinegar
5. 1 Cup Greek Cream Cheese / Greek Yogurt (or you can do regular cream cheese – I prefer this, it is healthier!)
6. Mexican Cheese or Monterey Jack (any cheese you like – I just use a little bit and the cheese doesn’t change the flavor much!)
(*I think before adding the chicken, this is 320 calories!)
 
Before I even get started, I plug in and turn on my crockpot so it starts getting warm. I pour everything except the chicken into a large bowl & stir it up as best as possible. I pour it all into the (warm) crockpot which is where the ingredients soften and start mixing together even better. I will say this – you need to make sure you have enough hot sauce or it will be more bland! Don’t skimp on the hot sauce – but also make sure you can handle it as well. One-half cup is plenty for me for this recipe! Anyway, once everything is melted and mixed together, add in the chicken and mix! I let it sit there for an hour or so, so that it all gets really warm and the flavor is soaked in! 🙂 
 
You can serve this with tortilla chips, crackers, or veggies. I don’t like celery but I am bad about eating vegetables so I try to eat them by dipping them in this dip since this overpowers the veggie taste, lol! And, I definitely notice that guys prefer chips for this dip.

  1. I'm not a big buffalo chicken person, but this dip sounds delicious! I have made quite a few Skinnytaste recipes and they always turn out well. It is fun to see you switching things up with a recipe post and your kitchen is very pretty too! 🙂 Thank you so much for sharing too!! 🙂

    It sounds like something the hubs and I could actually agree on too. I'm constantly having to cook separate meals because he does't like "gross model food" (lol) and I obviously can't do that much "man food" (again, his words haha).
